Yummy chocolate chip cookies

Growing up, one of my favourite desserts ever were my mom's chocolate chip cookies--- they were quite the production to make, always with chocolates, raisins (?!)and lots of sprinkles…. my brothers and I would scarf them down quickly and they rarely lasted more than a few days….. being a parent and knowing now how snacks work, I now realise that my parents had their fair share as well.. 

So now that we've begun Christmas baking, we decided to make our very own chocolate chip cookies from scratch…. so many additives and unpronounceable words in the ingredient does not a healthy snack make…. well, I guess neither does the sugar and flour in this recipe--- but at least it's wholesome and homemade right!? And it's also an easy one for family baking night.

Ingredients:


1 cup butter, softened
2 cups packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour

1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped nuts- I used a mixture of walnuts and sliced almonds


I had a very cranky helper who wanted to eat all the chocolate chips



And another very helpful one who stayed in her jammies all day



Directions

Preheat oven to 350 degrees F (175 degrees C).

Cream together the butter and brown sugar until smooth.

Beat in the eggs one at a time, then stir in the vanilla.

Dissolve baking soda in hot water.Add to batter along with salt.

Stir in flour first, then chocolate chips and nuts. 

Drop by large spoonfuls onto ungreased pans.


Bake for about 10 minutes in the preheated oven, or until edges are nicely browned. For chewier cookies, 9 minutes is fine. For more crispy (like my mom’s cookies)- about 11-12 is good.

Again, I like mine crispy so mine are browner than most people would like.
