Life of late

Slacker blogger here hasn't posted since the beginning of the month so I've got lots and lots to share!! Let's get this party started!!

What's up Wednesday?


Just some random thoughts for Wednesday!


What we're eating:
Soups, salads, veggies, lean meats and fish. No dessert from Monday to Thursday. 
On weekends, we splurge a bit so on weekdays we're trying our best. Trying being the operative word. :-)

What I'm reminiscing about:
One of my uncles is quite sick so I'm thinking of him, praying for him and his family and remembering how kind he always is to everyone. 

What I'm loving...
Using portabello mushrooms instead of pizza crust. Sounds weird I know but it's so, so yum.

Also loving my two year old's recent obsession with bracelets….. talk about stacking!
                                                

What we've been up to...
Enjoying spring! We went to the local farmer's market for the first time this year on Saturday and went to Wonderland (the Canadian version of Great Adventure) on Sunday. Bring on the good times that come with over freezing temps.

What I'm dreading...
Cleaning my basement! And dance recital weekend. THink 4 recitals in ONE weekend. 

What I'm working on...
Purging the girls' and my closets. Bags and bags of stuff to be stored or donated, I'm sure!


What I'm excited about….
Our first trip with the kids to Disney! So, so excited and if we're really being honest, just a little scared! Started planning and pinning already.

What I'm watching/reading...
I'm watching Grey's (although I'm seriously mad at Shonda), DWTS (team Rumor), The Good Wife (though it's dark for me these days), The View and Gilmore Girls reruns! 
I'm rereading The Matchmaker- Elin Hilderbrand's summer 2014 book- might be my favourite one yet. A new one comes out in June!

What I'm listening to...
Everything is awesome…. again… and again…. and again. And screaming along singing along very loudly. 

What I'm wearing...
Spring Jackets--- finally. My olive military one and my Bench workout jacket in the morning. And flats!!! Boots and winter coats are finally packed away

What I'm doing this weekend...
 Long weekend as the girls are off on Friday. 
Girls' night on Thursday at an oyster bar, lots of play and fun on Friday, a friend coming over for dinner on Friday night, swimming on Saturday as well as a Stag and Doe and a birthday BBQ on Sunday! 

What I'm looking forward to next month...
Someone's birthday, a little Mother's Day TLC, the end of Kindermusik for this year (aka crazy Wednesday activities) and lots of nice weather. 

What else is new….
April was fun with Easter and C's Birthday and Carnival. Now I just need to get stuff done now that tax season is finished!

Mother's Day Wishes…
This year D has it easy. We're going to a Stella & Dot party the day before and I adore their stuff so I think that between him and Cass, I'll be good.

Caribbean Corn Pie

I love corn- corn anything-- the cob, corn soup, corn fritters, corn bread- once it has corn in it, I'll take it. 


One of my very favourite corn things is this corn pie. Such comfort food that reminds me of Sunday lunch back home! I found a recipe online and adapted it just a bit to add some veggies in.


Ingredients



1 can whole corn

Water
1/2 teaspoon salt
1/2 tsp ground white pepper
1 egg, room temperature
8 Tbsp fine cornmeal
1/4 cup (2 oz) unsalted butter
3/4 cup diced onions
3/4 cup chopped bell peppers (mixture of green and red)
1/2 chopped mushrooms
1/4 cup celery 
1/2 cup grated carrots
1/2 cup cilantro
Minced hot pepper to taste
1 cup half & half, table cream, whole milk or evaporated milk 
1 cup grated sharp cheddar cheese, divided in half- I used low fat





Preparation:

+ Preheat oven to 350 degrees F.
  1. + Drain and reserve the liquid from the corn.
  2. + Pour reserved liquid into a 1-cup measuring cup. Add  water to bring it up to 1 full cup of liquid.
  3. + Pour the 1 cup of liquid and egg into a large bowl. Add salt and pepper and mix well.
  4. + Add the cornmeal to the egg mixture. Stir to form a smooth paste and set aside.

+ Add butter to  saucepan on medium heat. place on medium heat and let melt. Add the onions abd saute until  translucent. Add other veggies.
+Pour in the milk, stir and bring the mixture to a boil. 
  1. When the mixture comes to a boil, immediately stir in the cornmeal and reduce the heat to low. Let cook on low heat for 4 minutes, stirring frequently.
  2. Add the whole corn and cilantro. Stir to mix. Let the mixture continue to cook on low heat for 5 minutes.
  3. Remove the pot from the heat and stir in 1/2 cup of cheese.
  4. Transfer the mixture to a greased baking dish. Smooth the surface and sprinkle the remaining 1/2 cup of cheese on top of the mixture.
  5.                          
  6. Bake for 30 minutes or until the cheese is melted and golden brown.
  7. Let rest for at least 30 minutes before cutting and serving.
And because we ate it before I took a picture, there's none of my own but I did manage to snag one from Simply Trini Cooking.




This pie is a great side for a turkey dinner, some roasted chicken or a BBQ!

Accessory Time

Good morning, friends! The kids are asleep after what was a very hectic weekend and truth be told, I wish I could be also. But since I'm a growm-up (as my two year old says), I'm up and ready to start a very hectic week.

Linking up today with Erika and Andrea for their monthly favourite things party about accessories. I love a good accessory. It's my favourite way to spruce up an outfit and make myself feel instantly more put together. When I was in the corporate world, chunky and statement pieces would be my way to really dress up but now, I tend to go on the smaller side--- at least for everyday life. Here are just a few of my faves.

(PS. these are so popular in the blogging world, I wouldn't be surprised if a couple of you have one or two as well)

My initial Kate Spade necklace is one of my everyday pieces. I use it by itself or with other longer necklaces. And on sale today too!


My Rayne necklace is one of my faves and I wish I could have it in another colour too but simply can't justify the purchase. I chose this colour as I wanted an all season sort of wear.

When I want something lighter for everyday use, my Stella and Dot  trinity necklace is another way to go. I use my initial necklace sometimes with it as well sometimes although this comes with it's own delicate smaller chain.


Cloth infinity scarfs all through the year for the patterns and the lightness but the warmth.


These BP earrings come in a multitude of colours at a fraction of the KS stud prices. 

(BP has a ton of great, cheaper, trendy stuff)

And finally, as I lose sunglasses like it's my job, the cheaper the better so these BP ones are on the list for sure.




And just because, these are my favourite tips for accessorizing:

+ wait for sales, I almost never buy full priced

+ Not too matchy matchy, earrings, necklace and bracelets don't have to be the exact same type of stone, metal or type. I don't even match two of the same usually but make sure they 'go' together.

+ Kind of confusing but not too unmatched either- prints, colours etc.

+ Love stacks and layering jewelry but they need to be done properly!

+ In the words of the lovely Coco Chanel, take one thing away. I very rarely do a huge necklace AND earrings or necklace AND bracelet.
