Lady Bug Caprese Bites

This recipe is the simplest one I've ever posted. In fast, I feel kind of bad calling it a recipe as it's really just slicing and assembly. 

I saw these a few weeks ago at D's cousin's baby shower…. they were so pretty and so yummy and I knew that I would be recreating them sometime soon! And that I did… for an Easter brunch I went to…. where everyone also loved them!

Ingredients

Fresh mozarella cheese
Grape tomatoes (or any small tomatoes)
Olives (pitted preferably)
Basil Leaves
Balsamic Cream/Glaze

(since this recipe is so simple, I used the best fresh items I could find since the tastes really come through) 



Method


Cut cheese into thin slices. (the better quality cheese do spring some water though)




And tomatoes in half with tiny slits on each half (about 1/2 inch)



And olives in quarters


Tear basil leaves (if you need to) to fit the tops of the cheese slices. (D's cousin made a home-made pesto and used it instead of the basil leaves and that was so delicious)

Assemble: cheese, basil, tomato and then olives



Place drops of balsamic on each to mimic a lady bug. You can use a medicine dropper if you're a perfectionist-- I'm not- hahaha!




And there you have it. So simple but so cute to take to a party! They are the perfect dish for a shower, picnic or brunch!
