I'm Oh weekends, time to sleep in! Although, this Saturday when I woke up bleary eyed, C begged me to make pumpkin pancakes--- I had been promising them to my team for awhile now. I didn't have the wherewithal to make them from scratch so I totally took a short cut. Here's the recipe that I used- taken from here but modified a bit.
Ingredients
1 cup of milk
1/3 cup canned pumpkin
3/4 teaspoon of pumpkin pie spice
1/3 cup of chocolate chips
1 cold stick of butter for greasing the griddle
Preparation
Combine pancake mix and spice together first in one bowl.
In a separate bowl, mix the milk with the canned pumpkin
Combine two bowls until well combined then add chocolate chips.
Heat heavy griddle or saucepan over medium/low heat.
Lightly grease the griddle with cold butter (easier to manage than room temperature but you can also use non-stick spray)
Cook for a couple minute on either side until cooked throughout. These are a bit denser than regular pancakes so they need a bit more time.
Serve with maple syrup-- the real stuff... Not that corn syrup stuff!
Delicious and so simple! I doubled the batch so my girls could have them for the next day as well and I could sleep in again.... pretty smart, huh?
