Tuesday's Recipe- No bake energy bites

My friend Jenn made these the other day and I kinda went crazy over them. So did my family. So much so that I had to make my own batch. And then between us and our friends they finished and then I had to make a half batch again for the un Super-bowl festivities at home yesterday. And now that's done and I'm seriously contemplating making another batch this weekend. They're that good! And they're kind of healthy too so you won't feel totally guilty eating them. 

So here you go. Adapted from Gimme Some Oven

INGREDIENTS:


  • 1 cup oatmeal- I used quick oats
  • 2/3 cup coconut flakes
  • 1/2 cup nut butter (Jenn used cashew so I copied her)
  • 1/2 cup ground flax seed (I didn't have this so I ground up a mixture I had of hemp, chia and buckwheat)
  • 1/2 cup mini chocolate chips
  • 1/3 cup honey (I think you can even do a little less than this)
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract

DIRECTIONS:


Stir all ingredients together (dry first and then wet) until thoroughly mixed. 


Cover and let chill for an hour.

Roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in the fridge for up to a week (they may or may not last than long)

Makes about 40 balls. 

So my detox begins this week. I'll allow myself a couple cheats here and there, but for the most part, it's all good eating, all most of the time. I don't do well cold turkey though so this recipe is a bit of a transitional one…. with just some dark chocolate thrown in for good measure :-)

  3. The chia seeds sound like a great addition. Reminds me of bene balls from Trinidad but not so hard to bite.
