I made this for Superbowl a couple weekends ago. Superbowl to me is all about the snacks and the half time show #girlygirl. This very simple recipe was some ooey gooey goodness but not with the 1000 calories to go with it!
Taken from All Recipes but adapted (a lot)by me.
Ingredients:
1 can of corn
kernels
1 jalapeno pepper (or two) depending on the spice
level you like.
2-3 green onions, chopped
1/3 cup of greek yogurt (or sour cream if you’re
not thinking about nutrition)
1/2 teaspoon
of cumin
1/2 teaspoon of chipotle chilli pepper (optional)
1/4 cup mayonnaise- I used Vegenaise for same flavour but like a third of the calories.
1/2
cup shredded Cheddar cheese (or Monterey jack)- I used lower fat
1/4 cup of cilantro (or more)- also optional
Method
Combine all ingredients and mix well.
Store in fridge. Can be made the day before even.
This recipe can be served cold or hot but I put it in the oven for about 15 minutes at 375.
Serve with tortilla chips and try not to lick the bowl.
