Parmesan Kale salad with Almonds and Dates

Oh winter waistline, how I need to see you go... Though I long to bathe in some queso, it's back to posting salads and veggies in the high hopes that it will inspire me to eat cleaner! Here's one of my favourites taken from Epicurious but adapted a bit. 

Ingredients:
+ 1 bunch of kale
Juice of 1/2 lemon
+ 1/2 shallot chopped
+ 1 tbsp honey
+ generous sprinkle of sea salt
+ 1/2 teaspoon or red pepper flakes
+ 3 tbsp of olive oil
+ 1/2 cup toasted sliced almonds
+ 6 dates pitted and chopped
+ 1/2 cup of shaved parmesan


Method:
1- Wash kale . Remove stems and chop into fine pieces. I use my salad spinner to remove any excess water

2- Mix lemon juice, olive oil, honey, shallot, salt and pepper flakes together. I used my mini chopper. 



3- Mix and massage well into salad. Do this at least a few hours before serving. 


4- Add dates, cheese and nuts.


5- And there you have it.


Even the toddler enjoyed it.


This can be mixed and matched to your liking-- pine nuts and cranberries, dried apricot and walnuts, feta or goats' cheese instead, add chicken and make it a complete meal. The possibilities are endless!

  1. This does sound yum, I had a kale ceasar a while back and have been trying to recreate it- I shall use this recipe instead!

  3. I'm right there with ya eating salads, and you're so right, queso would be better ;) But this one sounds delicious. I'll have to give it a try, especially since Joe loves kale.

  8. Yum!! This sounds good! And I agree with you on the winter waist line. And then Valentine's Day and then Easter. Oops. I could use a good salad to help balance out all my candy eating!

  10. This looks so good. Confession, I have never really tried kale. I am a spinach and romaine kind of girl and not the best at trying new foods :(.

  12. I only tried kale once and it was not my fave. Probably one of those things I should suck up. The waistline could use all the help it can get. holidays are not my friend ha!
