Easy Cauliflower Rice

I'm in love with cauliflower rice…. you know what they say about sliced bread…. well this really is the next best thing. I make a big batch at the start of most weeks for a week's supply. Seriously, to me it's so similar to regular rice and low calorie, paleo friendly, gluten free and fibre rich-- and apparently zero weight watcher points too. Here's my very quick and easy recipe-- though in the next couple weeks, I think I'm going to experiment a bit.

Ingredients:

1 Large head of cauliflower
Salt and pepper to taste- I eyeball it but you can use maybe a teaspoon to begin and add if you wish.
Olive oil just to coat the cauliflower- I think 2 tablespoons for a large cauliflower should suffice

Method:

+ Preheat oven to 425
+ Chop cauliflower into small pieces and place in food processor, mini chopper or blender. I think you can even hand-grate it though that will take some time. You want it in rice size pieces-- be careful not to overblend or it can get mushy
+ Lay out on a greased tray-- I use a spray and I also use foil for easy clean up
+ Coat with olive oil, salt and pepper
+ Cook in oven for 15 minutes turning once.




This 'rice' is an amazing base for stir fries, caribbean, indian or thai food with waaayyy less calories and it tastes so similar, it's insane.

{Yep, still counting those calories--- well about five of the seven days for the week. Also cutting sugar and dessert waaay back, bumping up the cardio and slowly--- and I mean very slowly, I'm seeing results.}
