Summer Quinoa Salad

This is such a delicious, super simple, refreshing, filling, healthy summer salad. I had it last week at my friend Dani's house for lunch and I might have become a little obsessed with it. I ate the leftovers she gave me for lunch and then made a batch for us to eat as well. I had that salad 4 days last week… Seriously it was so yum!

Here we go….

Ingredients:

2 cups cooked quinoa
2 bell peppers
6 celery stalks
2 large carrots
2 green onions
4 mini cucumbers
1/2 cup sunflower seeds
1/3 cup olive oil
4 tbsp apple cider vinegar
1-2 tbsp lemon juice (fresh is preferred)
1 tbsp soy sauce
salt and pepper to taste



Method:

Mix all wet ingredients:




Chop all veggies into chunky pieces (except for cucumber)


Combine the quinoa and veggies and then pour the olive oil mixture on top. 
Right before serving, serve with cucumbers and sunflower seeds mixed in. 


This recipe also refridgerates very well for a week's worth of lunches. 

I can see my summer being filled with this awesome salad! And because of the quinoa it's quite filling as well. And pretty cheap to make a huge batch!

  7. Yay, I've been waiting for this recipe!! Love that except for the quinoa there's practically no cooking involved. Perfect for summer. And perfect for weekly meal prep (which I swear I'm actually going to do one of these days...)
