Pea Pesto Dip

I'm not a huge peas fan by any means… To me, they're sweet and mushy and really don't add much to a dish. BUT… when I had this pea pesto that my friend Kathryn made, I've become a convert. It's so yum, pretty to look at and just screams summer with it's delicious flavours.

Here you go, pea pesto. Taken from Giada's Pea Pesto Crostini recipe and adapted just a bit.

Ingredients:


8-10 oz of thawed frozen peas
1 large garlic clove
1/2 cup grated Asiago cheese (or any other hard sharp cheese like Parmesan or Piave)
1/3 cup of olive oil
a couple sprigs of herbs (either mint or cilantro work really well)
Salt and pepper to taste


Method

+Mix the peas, cheese, garlic, herbs, salt and pepper in your food processor (I used my Vitamix)

+Slowly add the olive oil in (be careful not to drop your spoon in, this seriously happened to me one time) until well combined

That's it!  Giada paired them with crostinis and I've done the same but they also work really well with veggies and nice crackers.



Such a simple, healthy, delicious (cheap) summer appie to bring to someone's home.
