Week 13- Everyday Life in 2014

Just when I posted yesterday about the lovely weather, it snowed again this morning! Cassia asked me if I thought it was going to be a shower day or a flower day. She then went on to explain that a shower day is usually a rainy, dark day but a flower day is when the sun peeps out for a few hours and gives the flowers sunshine to grow.... The good news is that although I thought it was going to be a shower day, it became a flower day! Well as much of a flower day as we're going to get anyways.

Spring has sprung--- and I'm testing out my new camera!!

Dare I say it?! Spring seems to have sprung. It's still pretty cold but for the most part, we have above freezing temperature--- it's been a long winter, we'll take it!

This weekend nice and relaxing with a sprinkle of activities thrown in. On Friday, I wasn't feeling too well so we stayed in and had pizza/movie night-- Smurfs 2 was on the agenda but truth be told, I only saw the end. I was pretty out of it.

On Saturday, the four of us headed out to Kindermusik and then to lunch as a family. In the evening, D and I went to a very nice restaurant for a belated Valentine's dinner (very belated) and then we headed to the mall. We were so tired we came home earlier than we had, sent the baby sitter home and just chilled. I guess it's not 1969 anymore!

On Sunday, Darin's cousins came to visit and take us to a lovely brunch. The day was so sunny  and Cassia really wanted to go the park. I've had my camera for a few weeks now and haven't really used it that much so I decided to bust it out. I must say, although it's bulky, I really love it. Here are just a few shots.

My kid is the one on the left

Wheeee!! Seriously, she said this everytime I pushed her.... every time.

Thank goodness she doesn't ask to go on the baby swings anymore.

I see us visiting the park very often this summer

Why so serious?

On another note, I've been up since 2 am, tossing and turning. At 4 am, I decided that was enough and I came downstairs. It's after 6, I've done an hour of work, made some food, blogged and made my list. Today is Day 1 of our Dr. Oz two day cleanse so I had to prep lots of stuff especially since D is doing it at work. Hopefully, I'll get to take a nap later today.... either that or go to bed really early--- like 7 pm!

Show Us Your Life- Favourite Healthy (Pasta) Dinner Recipe

I love the SUYL link ups that sweet Kelly from Kelly's Korner hosts and jump at the chance to join the party whenever I can. This week is right up my alley as it's all about recipes and what's more- healthy recipes! Can't wait to see what the others have posted.

** Sidenote, (April 11th) also posting this for the pasta SUYL as it's also my favourite pasta recipe.

Now that summer is upon us, it's the time of the year I whip out my sesame chicken cilantro  pasta. I started to make this the summer after we first got married. It was a lazy Sunday and I had chicken in the fridge, cilantro and green onions. I googled those three ingredients thinking some sort of chicken salad would pop up but instead this pasta did. Cue the heavenly music- I knew I had a winner!  I  was so excited to make this that I ended up  going to the grocery to pick up a few ingredients anyways.

Now I make it all the time. D and I  can have this weekly. The kids have begun to love it as well. Guests we have also love it and it's a quick and easy meal to put together when there's so much stuff to do in the summer!

Here is it- Taken from All Recipes but adapted by me :-)

Ingredients

O

  1. Heat a skillet over medium-high heat. Add sesame seeds, and cook stirring frequently until lightly toasted. Remove from heat, and set aside.
  2. Put cooked pasta into a large bowl.
  3. In a jar with a tight-fitting lid, combine vegetable oil, soy sauce, vinegar, sesame oil, sugar, sesame seeds, ginger, and pepper. Shake well.
  4. Pour sesame dressing over pasta, and toss to coat evenly. Gently mix in chicken, cilantro, and green onions.

Here are some other alterations I use as well.

- Catelli Smart Pasta for a healthy, more fibre filled meal
- I often cut the oil down to 1/3 up or add 1/4 pack of pasta again- that way we have more left overs for the day after
- I usually steam my chicken before shredding it- that way it absorbs the dressing even more
- I usually add about a cup of chopped sweet peppers as well. You can also add chopped celery, carrots, cherry tomatoes, mushrooms etc based on your preference. Maybe I'll do that this year!
- I haven't tried it but I think steamed shrimp would work really well also.

This meal tastes even better the day after and it can be served either hot or cold. Enjoy!!!

Week 12- Everyday life in 2014

Another Wednesday is upon us. Wednesday is usually one of our busiest days. Apart from all the everyday stuff, I usually take Cassia to music and then trek on over to dance. D also comes home late today as well. Let's just say that this is the day I usually have to have that mid-afternoon caffeine fix.

Day #85

I wonder if all this dirty snow in our neighbourhood will ever melt.

Day #86

Baking night tonight! Great job squeezing those lemons!

I just love these matching aprons that Aunty Mala had made for Cassia and me. Anjali wasn't in the picture yet so we'll have to take turns!

Day #87

This lemon cake that we baked was sooo yummy. I'm not usually a lemon cake person but I just might be a convert.

Day #88

Look who finished her winter skating session!!
#soproud

Day #89

It was so nice on Sunday, we walked to the local restaurant for an early dinner. I love the expression on  C's face

Day #90

I put a smock on A and let her play with water in the kitchen sink. All was well until she began dumping water on the floor.

Day #91

I just love my morning alone time with D.
