Hello Strangers! Life Lately….

What a busy week! We've had some visitors. Some cuter than others. My brother and his family have spent the last week with us visiting from NYC). Also the four of us decided to sleep train my nephew through his 4 am feed and to nap properly (homeboy went from two naps to ummm... zero. So yeah, the parents were tired). But he left our home sleeping like a champ, not feeding at night and going to nap without too much of a fuss. So proud of him… Do not cave, M & D… they are smart buggers!

It's also been a joy spending uninterrupted time with my sister in law and brother who have been such good company wonderful houseguests… I mean who doesn't love coming home to a clean house and folded laundry when you've rushed out for morning drop off (times two). And there have been chats over coffee, late nights and wine and snacks…. and really, really good chats.

Then there was Thanksgiving weekend and hosting ten adults and four kids… all sleeping over. I think every single towel and sheet I had was used. The best turkey ever (it's all about the brining and injecting), lots of convos, three different types of pies and red lobster biscuits.

So not a whole lot of blogging…. or picture taking but here are just a few  of life lately that I managed to sneak in.

My little monkey when we all went to the park.

The farmer's market is awesome at this time of the year

My sister in law came to help me at the market. Love this girl.

My other nephew had an awesome  truck themed party
which my girls boogied their way through

And A had the best time with the party entertainment-- a puppet show!
My aunt gave us such beautiful flowers.

Thanksgiving apperitifs

And took a little backyard break for Thanksgiving. Weather was w.o.n.d.e.r.f.u.l.

Is it Friday yet?!

Five Friday Favourites!

Where did this week go? We've been so busy around here and I don't know doing what?! Chores, errands and just stuff is keeping us so busy! Happy Friday, indeed!!

1- We have visitors for the next week. Yes, this little boy, his mama and dad (my brother) are coming to visit and some awesomeness will be happening! We are beyond excited. And Happy Birthday to his mama! We will be celebrating for sure next week!
I dare you not to smile with this pic!

2- Bits and pieces have been sneaking in around here.

But yeah that's a lemon cake in the foreground. Lemon cake is good year round.

3- Wanted some cooler weather to begin wearing jeans, booties, blazers and scarves…. But yesterday kicked me in the bum (as the six and under crowd giggly whisper around these parts) with the cool weather. 10 celsius- that's like 50 fahrenheit! Just.like.that. Last week, we were in tanks and sandals!

4- Is anyone as obsessed with Locked Away as I am? Adam L scores again! And R. City of course. (who is that?)

5- This Tuscan Bean Soup with Shrimp from Ree is definitely going to make it's way on my table some time soon!

6- And yeah, I'm at six, but a little inspiration to start your week.

Happy October and Fall Bucket List 2015

Happy October? How did we  get here already?! Even though I'm a self confessed summer stalker, I'm kinda into the cooler temperatures and all that come with it. So here we go… tons planned for the fall! Some easy, some not so much. But all fun!!!

(Disclaimer, I downloaded the background and totally can't find the source. So if it's yours, sorry for the lack of credit)
(Other disclaimer, I didn't put organise basement part 2 but that's also huge on my list this fall)

Happy Fall, y'all!! It's going to be a good one!!!

Peanut zucchini noodles with chicken

We've been on more of a clean eating kick now that summer is over--- however, boring food is not my thing so I try to incorporate lots of flavours, textures and veggies into what I'm doing. Enter Asian inspired zoodles!

Ingredients:

5-6 zucchini
1 large onion
1 clove of garlic
1/4 cup of cilantro
1/2 bell pepper, cut into strips
1 carrot, cut into thin strips
1 cup of mushrooms, sliced
1.5 pounds  of chicken, cut into small cubes(or more or less depending on your preference)
1 tbsp of oil

Peanut sauce

1/2 cup of natural peanut butter
1 clove of garlic
1/4 cup of cilantro
1 tbsp of sesame oil
2 tbsp of rice vinegar (or other vinegar if you don't have rice vinegar)
1 tbsp of hoisin (optional)
1 tbsp of sweet chili sauce (optional)
1 tbsp of light soy sauce
Honey to taste
Hot sauce if you wish

(blend all of these together well and the peanut sauce is done)

Optional Toppings:

Toasted sesame seeds
Cilantro
Green onions

Method

1- Cut zucchini into strips or spirals. I have a veggetti but you can use a spiraliser or even a mandolin or cut into tiny strips yourself.  Set aside.

2- Use a mini chopper (if possible) and chop onion, garlic and cilantro. (I'm all about saving time)
3- Place 1 tbsp of oil in pan and when hot, throw the onion mixture.
4- When translucent and fragrant, add the chicken and brown it. Reduce heat to medium high
5- Add the veggies except for the zoodles.
6- Add peanut sauce, tablespoon by tablespoon as necessary until saucy--- yeah, that's right. Saucy.
7- Either remove from pan or in a separate pan, heat oil and throw in zoodles. Cover pan to simmer for two to three minutes until steamed . Add chicken mixture until well combined. Add more sauce if you wish. The zoodles do give off some liquid!

8- Top with cilantro, green onions and sesame seeds… if you wish.

Also, there's a bit extra peanut sauce but it can be used as a dipping sauce or I just mixed it in with some regular pasta for my kids.

This recipe was seriously so, so flavourful and yummy! I used a spoon to scoop up the extra sauce from my plate. It would go well with shrimp or tofu also.

I can't wait for when it's on the rotation again!
