Friday Favourites--- G-bye summer

Yeah, even I have to admit it…. it's the end of the most wonderful time of year--- oh summer, what fun we had!!

I made a list at the beginning of summer and look at that… with such a busy summer we managed to do quite a bit! Two left for a complete list. 



And here are just a few of our wonderful memories...

Finally chased down that ice cream truck at our aunt's house…. the ice cream truck literally speeds past our house. Nevertheless, we had lots of ice cream this summer.

And of course there was Disney and our amazing cruise



And my sweetie's sunshine party



We made jam like Olivia Pope dreams of…



And did our annual trek to African Lion Safari.



Finally got to an Ontario beach






Our girls trip to NYC was lots of fun



And lots of pool time….


The temps are cooling and fall will be fun for sure…. but summer 2015?! 
Definitely one to remember!

Fun reads


Few things about me:
1- I love to read
2- I learnt to read at a really young age and it's been no turning back-- thanks, Dad! It is my fervent desire that my girls will be the same way 
3- I reread my books-- especially my Elin Hilderbrand
4- I love the Kindle app on my iPad… especially for travelling and reading at night
5- I wish I had more time to read



I love summer reading (and holiday reading, but that's a whole 'nother story). The beachier  and easier the read, the better! Here's a few of my favourites from this summer!


I was a huge Judy Blume fan growing up and I thought she was done writing. I love her very frank, relatable style of writing and this book did not disappoint. It's about a little town in New Jersey, three very unforeseen, simultaneous crashes that occurred there and how it affects the protagonist and her family. Once again, I loved Judy's attention to detail and wonderful emotional understanding. And I love when a book is long and captivating from beginning to end….  makes me feel like I get my money's worth.


Elin is my other love and in a way I feel my summer truly starts with one of her reads each and every year. And I reread quite a few of her books each summer as well. Her style is very similar to Judy, the story always presented from different character's viewpoints and it's always based in Nantucket where she resides… and now a place that's on my bucket list. The Rumor was another good one, based on little and big, true and untrue rumours and its impact on the characters… not my absolute favourite but I'd still re-read it and I'm glad I bought it. 




This book probably impacted me the most as it's based on the real life of Carole Radziwill and her vivid and haunting memoir of her life and love story with her husband, the Late Anthony Radziwill (JFK Jr's closest cousin). She was also Caroline Bessett Kennedy's best friend. Her story is one of strength, grace and determination in the face of the death and despair. So well written. I couldn't fall asleep the night I read it… definitely not my typical beachy read but probably my favourite all summer.





This book was another favourite of mine. Jennifer Weiner has been a little hit or miss for me recently but this is my favourite book of hers about the most unlikely, on again off again, soul-mate sort of love story. LOVED IT.

Turkey Quinoa Stuffed Peppers

I love Mexican!  But not the calories that come with a ton of the cheesy dishes so now we do our Mexican at home.  I had stuffed peppers for the first time from my friend Dani-- as they're usually done with beef in the Mexican restaurants- and I was sold. And the filling makes lots too so you can have multiple meals in the days to follow. It's a bit of chopping and dicing but so, so worth it. 

Ingredients



1 small can of diced tomato
1 cup of cooked quinoa (or brown rice)
1 can of black beans
1 cup of frozen corn
1 jar of salsa
2 pounds of turkey with taco seasoning mixed in
2 large onions- chopped
3 heads of 
3 zucchinis (diced)
2 cups of mushrooms/asparagus (optional) 
1 cup fresh cilantro (optional)
1/2 cup of cheddar cheese
cumin and salt to taste
Peppers 

Cheese, cilantro and onions to sprinkle on top. 

Method

1- Chop all veggies.


2- Saute onion and garlic and then add all the veggies. Mix in beans, corn, cilantro, cumin, diced tomatoes and salsa  and keep on medium until veggies are cooked. Add cheese.


3- In a separate pot, brown turkey in 2 tablespoons of canola oil. Mix into veggie mixture slowly. Add salt to taste.


4- De-seed and de-vein all peppers-- this makes a huge batch maybe like 8-10 peppers worth (times two as you halve the peppers). 
In a half inch of water in a flat dish, place peppers face down and microwave for two minutes.



5- Stuff peppers and place in an oven with temp of 350 for twenty minutes. 


Remove from oven and add cheese. Return to oven for 5 to 10 minutes again. Top with green onion, cilantro and sour cream if you wish.




There you go…. This is one of my favourite dishes. So yummy…. Light but hearty at the same time!  We get our veggies in but with the sprinkling of cheese, quinoa and the ground turkey, it's really filling too. The kids just eat a big bowl of the filling as they're not a fan of the cooked peppers but that's just quinoa, turkey, beans and veggies so that works too!!
