The Most Amazing Gluten Free Chocolate Chip Cookies

One of our cousins posted this on Instagram and I knew we'd have to try it... It's the most easy cookie to whip a quick batch up and it is one of the very best chocolate chip cookies I've ever had.... and I'd consider myself a cookie connoisseur of sorts. It's also gluten free and can be made vegan if you omit or switch out the chocolate chips out. 


Gluten Free Chocolate Chip Cookies

Ingredients
1 and 1/4 cup of almond flour
1/4 cup of maple syrup (the real stuff)
1 teaspoon of vanilla
pinch of salt
pinch of baking soda (like 1/8 teaspoon)
5 tablespoons of coconut oil
1/2 cup of chocolate chip cookies. 

Method:
1- Combine dry ingredients together 
2- Combine wet ingredients
3- Mix it all up! (told you it was simple)
4- Using a tablespoon,  drop the mixture about two inches apart on a parchment lined cookie sheet.
5- Bake at 350 for 7-10 minutes.



Super simple and incredibly delicious! Try it-- you'll thank me later.

Mother's Day Weekend 2018

Happy Monday, friends! I had such an amazing weekend with the family. Here are some highlights:

On Friday, I made yummy tuna poke, salmon ceviche and two types of almond flour cookies! I also did some laundry as I knew we would be busy for the rest of the weekend.

On Saturday, after breakfast, we headed to Buffalo to update D's passport and well as it was Mother's Day weekend, I figured we would go shopping at some of my very favourite places (read: Target, Trader Joe's and Nordstrom Rack)

I love the Sugarfix Bauble Bar Collection at Target! I'm also into their new Hearth and Hand line by Joanna Gaines. 

Once more, TJ's flower selection knocked it out of the park. Picked up a few kid lunch box snacks- like freeze dried okra--- let's see what the verdict is on that one LOL. My kids love real okra so I figured I would give it a shot.

We stopped in one of D's favourite wineries in Vineland on our way back.




The country drive was so beautiful


Dinner was amazing! King crab legs are my love language.




 A little family squinty selfie before we came home to yep more laundry, packing away our purchases and an early night.

My family gave me a Mother's Day massage and beautiful presents. C did an iMovie which made me quite weepy :-). Good violin and piano playing by your kid does that. A also gave me a "bag of tea" and a book of coupons. A minute I cashed in the coupon for her to be cheerful that day, it was null and void. 



D made these delicious sugar free cream cheese pancakes for us all.


I did yoga at home, D took A to skating and then we headed to brunch. 


I had too many oysters and shrimp to count.






I catched up with a lot of family over the phone and on Facetime before C and I went for an evening walk. I got rid of some dandelions, D barbequed some turkey burgers and we hung out with the kids before calling it a night.

Just in time for Mother's Day, I thought it would be fun to survey my kids on what they thought about me, 


1. What is something I say a lot: 
C- Clean your room
A Go to school (I think she means when I use my 'Mary Poppins/Incredible Hulk' voice in the morning to say "Let's go")

2. What makes me happy? 
C- when my room is clean... or when anything is clean
A Smiling

3. What makes me sad? 
C- when A and I are disrespectful
A-needing to clean up the whole house (there is a definite cleaning theme here)

C 5 feet something

C 40--- no 39

C hug Anjali or me
A Study (aka work on the computer)

7. What makes me proud of you?
C-When I do good in swimming
A- When I finished the reader levels

C- doubles... no... yeah. I know you love oysters!
A- jalapenos (?!)

9. Do I have a favourite child? 
C- no-- even though when sometimes A is crying you like me better (#truedat)
A- no

10. If I could go anywhere, where would it be? 
C- Either to Rome again or to Greece
A- Mexico

11. Do you think you could live without me? 
C- No
A- Shakes her head. Uh-uh

C- It used to be Perfect but then you got sick of it

C-  Nice, kind of strict... well I don't really talk about you a lot.

10 things motherhood has taught me

Here's looking at you, Thursday...one more day before fabulous Friday! Today, right before Mother's Day, I'm linking up with Erin to talk about 10 things motherhood has taught me....


Get ready for a whole lot of light hearted random:

1-  I had a lot of free time before kids.What did I do with it all?!

2- Being kind is more important than being right. Although if they're getting the truth, I want them to get it from me and not some random mean girl at school. 



3- I've gathered lots of different bodily fluids in my hands--- no further explanation necessary

4- That I'm truly blessed to be doing this with a very involved, very patient, very good father.



5- They listen to everything! Your cadence, your gossip, your complaints... important to zip it sometimes or wait until they're not around.

6- Brighter is better. At least with their selection of your nail colour for your manicure... the words "too light" have been excitedly exclaimed at the salon 

7- Trust your gut, mamas! When you need to say no, just do it... as guilty as you may feel.

8- But.... step out of your comfort zone.... for your kids' needs as well as your own. You'll both survive! 


9- Their fashion sense is not yours... they will choose party dresses, stripes, sequins and leg warmers sometimes all together... and that's okay... for home lol. I've learnt to deal but if it's a hard no, then I say something. 



10- Laugh often and be silly! You'll be a better mama for it. And videos are better than pics to remember those moments!
