What's up, Wednesday?!




Another one of those link ups that I haven't done in forever! 

What we're eating this week?
I've been ill and have zero energy so meal plans for this week are going to be very low key. I'm think easter dinner left overs, a rotisserie chicken, salad, soups, sandwiches, quinoa… whatever is easy! 

What I'm reminiscing about
This Easter was pretty low key as per  D's request. And it's a good thing as I was as sick as a dog. Every little thing I did sapped my energy though we did manage to make a small Easter dinner.  I couldn't help but think back to last Easter though and all the fun that was had. 
Despite all the bed rest, I did manage to take a couple of pics of them in the Easter dresses my mom got them! 



What I'm loving
This new super fast internet that we've switched to after a couple months of living with 1997 internet. 
The sweet spring days that are peeking out. 
And the easter candy my kids got--- haha!

What we've been up to…
Getting ready for spring in our new house-- landscaping and new pool-- lots of fun but so.much.work.
And last minute planning for Cassia's birthday.

I'm really going to try to have the back yard looking like this but I dunno!!

What I'm dreading…
See above… oh and we need to finish off some painting and some trim but I'm not looking forward to having painters/contractors in my house again!

What I'm working on…
Getting spring organised with this new house, finishing some more unpacking and posting some more! 

What I'm excited about…
Warmer weather! And good times with friends and family. My brother and his family are in Canada until mid summer so we really want to spend lots of time with them. Also, a friend and her family are moving away at the end of this summer so I hope to spend tons of time with them.

What I'm watching/reading…
I'm not watching tons of TV these days as all the PVR-ing I did got deleted when we switched cable providers #firstworldprobs.  I'm one of the last few people on earth still loving Grey's, so I'm caught up on it! Oh, and D and I  watch The Good Wife together! Did anybody see The Catch? The new Shonda et al show? I'm intrigued so far...
I've been reading tons with vacay and being sick. So much so,  it merits it's own post. When I love an author, I read numerous books of theirs. So right now it's Jennifer Weiner and Liane Moriarty. #betterlatethannever

What I'm listening to..
The Google Play app. It's replaced Songza #obsessed

What I'm wearing…
This weather is weird. My spring coat comes out and then I have to bring back out the winter one!  But lots of Lou & Grey and leggings with tons of cover the winter weight tunics. And boy do I love my Kate Spade initial necklace. I bought it on sale and wear it several times a week!

What I'm doing this weekend…
Getting the kids toys put out, getting my hair done and some family time!

What I'm looking forward to next month..
A little lady is turning 7 and is having a trampoline party! Getting my eating totally back on track! And maybe, just maybe, a visit from my parents.

Crispy (almost healthy) chocolate chip cookie.

I don't think I've posted a single recipe for the year!! #slacker #myovenistoosmall. But on our snow day before Easter my kids wanted to make some chocolate chip cookies. And I was lazily googling vitamix cookies recipes and came across this one. So though it's not a totally vitamix recipe but it seemed easy enough and the right combo of healthy and sugary to please our little bunch. It was the perfect pre-holiday snack. 

  

Ingredients

(makes 72 cookies)


2sticks of butter 
2 cups of flour
 (I used whole wheat white flour)
1 tsp baking soda

1 tsp baking powder

1 cup granulated sugar

1 cup brown sugar

2.5 cups blended oatmeal (blend oatmeal to a fine powder- this is where my Vitamix came in)
2 cups milk  chocolate chips

generous sprinkle of salt
1 8 oz.
1 chopped chocolate bar (1 cup of mini eggs in my case)
2 eggs

1 cups chopped nuts ( I used a combo of walnuts and almonds)
1 tsp. vanilla

Method

Mix the butter and both sugars together
Add eggs and vanilla slowly
Mix together the flour, oatmeal, salt, baking powder, and soda and add to the wet mixture.
Add chocolate chips, chocolate and nuts.

Roll into 1 inch balls and place two inches apart on a cookie sheet.


Bake for 10- 12 minutes at 375 degrees depending on how crunchy you want your cookies to be . 
Serve with cold milk and a smile


This one will definitely be on repeat in this house… it was the perfect combination of sweet and crunchy!

Friday 5

Two posts in two days. Must be 2014! Happy Good Friday to everyone celebrating Easter this weekend. I love all the goodness and salvation associated with this weekend. This week has not been the absolute best (there have been worse but there have definitely been better)… so my favourites this week are those things that brought just a bit of cheer to us.


1- Check out this beautiful housewarming gift we got the other day. Isn't it so pretty and fun! 
Not pictured but equally lovely, were two beautiful bottles of wine we got from another family to save for a special occasion. 

2- To my extreme horror, A gave herself bangs (and random very short layers) this past weekend…. Argghhhhh!!! So yeah, a short bob ensued. If you look carefully, you can still see some very short bits of bang.



3- I'm almost 20 years late but since reading What Remains by Carole Radziwill last year, I've become a little obsessed with the later Kennedys. This book I borrowed from my library by his assistant, is another good read about them. 


4- Our first (and most likely only) snow day was yesterday. I was thrilled to have a lazy day at home with my little ladies. We read, baked, watched loads of TV and dyed our Easter eggs. The girls LOVED it.




5- And now here we are a five day weekend! (We have Monday off too).

Have a wonderful holiday everyone. My husband has asked me for a very low key one so we have not a lot planned except a whole lot of family time!

Greatness at Great Wolf Lodge



Our Canadian 'March Break' follows the American spring break. As we just came back from Mexico, we kept it pretty low key but still managed to have some fun. Here's just a bit of picture over load. The highlight for my kids was Niagara's Great Wolf Lodge. It was our first time there with 

My friend Jenn organised it and our four went with her family and her sister's family. We spent lots and lots (and lots) of time in the water park…. I mean about 80% of our time. There were pools, slides, rides and 'hot tubs'. 




 We ate a LOT of junk


My little ladies also got their first manicures… They loved the pampering and now when A sees my nails painted, she asks if I went to 'scoops' (the name of the place). 


These two are so cute!



They also loved the story times, the arcade and all the Magic Quest fun. Jenn and her family are experts in this place so they made sure to take us around to see everything!










We just went for one night but then stayed the next day until story-time… you're allowed to use their facilities until 9 pm after you check out. My two crashed almost instantly. 

The rest of March break was mostly local and pretty low key! Lots of library programs including a puppet show and a magician. We also had my nephew for his very own parent-free sleep over and celebrated St Patty's Day with the kids, wings, green beer and apple juice. 

It wasn't just all fun though. My kid accidentally and majorly flooded my friend's toilet and almost a floor of her house. It was INSANE and AWFUL! The other one gave herself some bangs, there was a very messy threat of room switches, broken ornaments and windows and all sorts of other crazy going on…

And now we have a long weekend coming up. Hopefully, it's nice and low key and there are no major calamities to report.
